chicken fried rice



today for lunch I made chicken fried rice. now before you shake your heads at me, I got the recipe from the Weight Watchers website! honestly, this was one of the best fried rices I'd ever had, and certainly the best I'd ever made. and it was full of flavor for not a lot of points.


a quick how-to for you all:

cook the brown rice according to package directions
cook chicken in a skillet until slightly browned and cooked the whole way through
chop scallions and garlic, set aside until ready to assemble the fried rice






once rice and chicken are both cooked, assemble the rice, soy sauce (1.5 teaspoons), scallions, garlic in a large skillet coated with canola oil (2 teaspoons). 

cook until the egg is fully cooked, about 3-4 minutes. once egg is cooked, add the chicken and snow peas, cooking until warm. 




serve and enjoy! 



back on the wagon

I recommitted myself to Weight Watchers today.
and honestly, it's about time I did.

went to the grocery store and have a pretty good menu planned for this week. some highlights include:

chicken fried rice
whole wheat pasta with butternut squash and ricotta
toasted quinoa salad with lemon and herbs
quinoa stuffed orange peppers with feta


it's nice to feel like I'm in control of my eating again. so nice.

cauliflower

today, I made this:


it's the cauliflower cake featured here by smitten kitchen



mine got a little browner than theirs did, but it is absolutely delicious! 

I have never been a huge fan of cauliflower, but after it was featured in this months whole living magazine, I thought I would give it another try.



and this, my friends, is a great way to eat cauliflower. 

this cake is wonderfully dense, and the flavors of parmesan, pepper, rosemary, red onion and basil all meld together beautifully to compliment the light flavors of the cauliflower. 



please. do yourself a favor and try this :o)

traveling is the demise to my dieting

so for my job, I travel. since August I have been on the road almost every other week. I won't stop until the second week of November.

when I'm home I have great control over what I eat. when I'm on the road, I do not. the students take me to all of their favorite restaurants, and for college students it usually means lots of french fries, cheeseburgers and pizza. all of which is food I love, but not food I should be eating lots of.

in the week before my most recent trip I was able to lose 5 pounds (yippee!) and I'm hoping that I won't return having gained all of it back.



I am getting a chance to go home on Friday though which is so exciting. it will be my first time home since I moved to Indiana in June! my mom will most likely be upset with what I look like (she usually is), but I'm just glad to sleep in my old bed, see my kitties and experience fall in Pennsylvania again.

when I get home, I'm going to try some recipes with pumpkin. I ate everything that I showed you last time and it was all delicious! I am hoping the recipe I have for pumpkin macaroni and cheese is just as good :o)

food and pictures

so far, the past two days have been good! I am remembering how my body feels when I decide to take care of it and eat food that's good and good for me. 

yesterday, I had this lovely sandwich for lunch: 


lettuce, hummus, onion, red pepper, cucumber and feta on sourdough bread. {fabulous}.


then, tonight for dinner I had this: 


sweet potato, black bean and green chili enchiladas. 



{it was so good I ate every last bite}.


I also made some apple tarts yesterday. but I'm taking them to the office tomorrow as a sweet treat for my awesome coworkers. and so that I don't eat them all by myself.

trader joes

so. today, I went grocery shopping at trader joes for the first time.

it. was. FANTASTIC!
tons of fresh produce and unprocessed foods at really good prices. I bought an entire weeks worth of groceries for less than $70 dollars.

on the menu for this week:

eggs in a frame
apple tarts (for breakfast and snacks)
black bean and sweet potato enchiladas
chicken with pasta and pesto
quinoa salad
veggie sandwiches on sourdough bread
